Thank you Lindsay Maitland for the lovely “Single-Serving Chocolate and Peanut Butter Cookie,” perfect for solo dwellers, on those days when you only crave one… who am I kidding, I made 3 of these. I never crave just 1 cookie! However, I’m not always in the mood to bake an entire batch either. This recipe is simple, no bake , easy to scale, and takes less than 10 minutes. I made these with Justin’s almond butter because that’s what I had, and added sesame seeds after tasting the dough to increase nuttiness. Note: these are fudgy cookies, similar in texture to Clif bars. The oats make them pretty filling and ideal as a pre-workout snack!
