Fondant potatoes. I was given a HUGE sack of potatoes, and it’s easy to feel overwhelmed by such a large quantity of this super starchy vegetable. To overcome that, I wanted to treat them as something precious, and to build layers of flavor and textures. While this looks super fancy, it’s pretty simple: sear rough cut potatoes on one side for about 5 minutes until golden, then flip and fill your pan halfway up with broth, and finish braising in the oven for 30 minutes. This method of cooking results in a crisp and crunchy top, and a creamy tender center. My potatoes turned out dark, because they needed a little more time to cook, but I don’t mind the intensified flavor 😊.
