Cecamariti pasta with roasted carrot sauce. Another great way to use up starter discard is by making cecamariti “husband blinders” pasta! It is a hand rolled yeasted pasta, traditionally made with leftover bread dough. However, this dish varied quite a bit by region, and I’ve seen vegetable fritter go by the same name. Since the flavor of the dough is already tangy, I paired it with a sweet and earthy sauce made of roasted carrots. The result is amazingly creamy and silky without any butter or cheese.
