Cloud Eggs

Inspired by the hail that woke us today – Cloud eggs. I had pinned this recipe for a while, and finally tried it! It’s adapted from a recipe for “nid d’oeuf” from an illustrated French children’s cooking book, called La cuisine est un jeu d’enfants, or “Cooking is Child’s Play.” Such a fun and fluffy way to enjoy eggs!

Ingredients

  • 2 eggs
  • 1/4 finely grated cheese (I chose white cheddar)
  • Pinch of salt
  • Pinch of pepper

Instructions

Preheat oven to 450°,

Crack and separate 2 eggs, keeping yolks intact

Whip egg whites to stiff peaks,

Fold in a big pinch of salt + pepper and cheese

Make 2 mounds on a lined baking sheet, make an indentation in the middle with a spoon,

Bake for 3 minutes, then gently place a yolk in the center of each mound and bake for another 3 minutes.
