My friend Iyan has been following Tabitha Brown and saw her recent post about vegan sushi. She then challenged me to make a vegan sushi, after which she would go vegetarian or vegan for a week. So, I chose to veganize the famous mosaic sushi! I followed the process as dictated by Make Sushi, using steam vegetables in place of fish.
