Vegan Jiffy Johnny Cakes

Johnny cakes are one of my favorite griddled foods! I found a box of Jiffy mix in my pantry, and had some scallions that had seen better days. I got inspired, so BOOM – scallion johnny cakes . I enjoyed them with a sauce of 2 parts maple + 1 part soy + 1 too hot to handle chili (courtesy of my friend Julie’s mom 🥵 ). I subbed flax seeds for eggs, olive oil for butter, and water for milk. #whoyoucallinahoecake

Ingredients

  • 1 box Jiffy Vegetarian Corn Muffin Mix
  • 1 flax egg (1 tbs flaxseed meal + 2.5 tbs water)
  • 2 tbs olive oil
  • 3/4 cup water
  • 1/2 cup chopped scallions
  • 2 tbs maple syrup
  • 1 tbs soy sauce
  • 1 too hot to handle chili pepper, smashed

Instructions

In a medium bowl, combine the Jiffy mix, flax egg, olive oil, and water. Let the mixture sit for 10 minutes to hydrate, then fold in the scallions.

Pour batter onto a prepared griddle or skillet and cook like a traditional pancake, adding more water to thin out batter if needed,

Combine the maple syrup, soy sauce and chili pepper into a sauce

Serve johnny cakes with sauce on the side (a little goes a long way!)
