Peach pie oatmeal cookies! A few weeks ago, The Peach Truck drove through Dallas, and several friends shared different ways to use up and enjoy 25 lbs of juicy peaches. A recipe I’ve pinned for a while is a soft oatmeal cookie by Amy’s Healthy Baking that is dotted with fresh chunks of ripe peaches. To make it vegan, coconut oil replaced butter, maple syrup replaced honey, and ground flax + water replaced the egg. The resulting texture is soft and chewy – very similar to muffin tops, and the flavor is identical to any streusel-topped fruit pie.
