Mushroom Cashew Pâté en Croûte. Pâté is one of the most decadent spreads on this planet, traditionally made with liver (minerally and meaty), spices, shallot, and a ton of butter (creamy and fatty) 🤤. This past weekend brought me a bounty of mushrooms, so this pâté contains sautéed button mushrooms (minerally and umami), soaked cashews (creamy and fatty), olive oil, and caramelized onions. The end result is sinfully tasty, but visually a bit drab. So, I also made a pâté en croûte! Note to my future self, wait longer before slicing to reduce the crumbling of the pastry 😅.
