Maple Orange Masa Cookies

Maple orange masa cookies. I will now call these my “M.O.M.” cookies for no other reason than it is an easy acronym. These cookies use an entire orange (zest and juice), and are partially sweetened with maple syrup, so my home smells incredible! I definitely had to hydrate these for at least 30 minutes to ensure they would not be gritty, and I got to use my moon cake mold to give them an easy floral design. The end result has a similar texture to graham crackers, and they are super crispy and nutty from the maseca.

Maple Orange Masa Cookies

Ingredients

  • 2 1/4 cups masa (250 g)
  • 1/2 teaspoon baking powder (3g)
  • 1/4 teaspoon table salt (2g)
  • 1/2 cup + 1 tbs olive oil (120 g)
  • 1/2 cup granulated sugar (100 g)
  • 1 teaspoon vanilla essence (8 g)
  • 1/4 cup maple syrup (75 grams)
  • Zest and juice of 1 orange (~1/3 cup and or ~80g)

Instructions

In a large bowl, whisk to combine the masa, baking powder, and salt,

Add in the oil, sugar, vanilla, maple syrup, orange zest, and juice,

Knead the dough and form it into a ball, wrap with plastic film and let it sit for at least 30 minutes to fully hydrate,

Divide the dough into 2 to work one half at a time. Roll out dough to 1/2 inch thick, then cut out shapes using a cookie cutter or cookie press,

Bake at 350˚F for 12-15 minutes (depends on how thick or how hot your oven heats. The main indicator will be scent and color (golden on the bottom),

These cookies will be tender when warm, and will firm up once cooled,
