Dalgona Coffee

Dalgona coffee, because all the cool kids are doing it! Incredibly light and creamy! Inspired by my friends Linh and Emily.
1 part each of instant coffee crystals, sugar, and hot water (most recipes use 2 tablespoons each). Whisk the dickens out of it with a hand mixer or manually with a whisk (took me 5 minutes by hand). The key to a nice fluffy result is AIR. Really work at incorporating as much air as possible and it will magically rise. You must use coffee crystals, and not coffee powder – something about the freeze drying process makes this whipping action possible. I added a generous pinch of sea salt to balance out the bitterness. Then float it over your favorite milk with ice. Enjoy!
