Creamed spinach with peas on crispy potatoes. I had frozen a large bag of spinach in order to prevent food waste. Since freezing breaks down the cellular walls of the leaves, they become ideal for recipes that require cooked greens, such as creamed spinach! I used coconut milk in place of cream, and tossed in frozen peas for sweetness and color. It is a luxurious side on its own, but I enjoyed it on top of crisp pan roasted potatoes.
