I had already planned to make a pot of beans today, but her story about clients sharing this simple meal inspired me to take it a step further and try this traditional dish from El Salvador. Literally a marriage between rice and beans, usually made with leftovers, it can be as uncomplicated (beans and rice) or complex (bell pepper, onions, tomatoes, cheese, crema, lime, cilantro, etc) as you prefer. I paired it with seared zucchini and a roasted tomato that I prepared yesterday.
