Banoffee brownie. My last banana of the bunch was too ripe to enjoy raw. I already planned to make a brownie, so it got mashed up and incorporated into the batter. Next was a small batch of vegan caramel, broken it into shards, and scattered over the top. As the whole thing bakes, these will sink down and form pools of caramel (technique by @violetcakeslondon ). Inspired by all the Comet NEOWISE photos we’ve been seeing, I decorated the top with a banana comet and powdered sugar tail.
